- Preheat the oven to 400F (220C)
- In a mixing bowl, cream the butter and sugar.
- Add the eggs one at a time and beat until fluffy.
- Add the mashed carrots
- In another bowl, mix all dry ingredients together.
- Add the dry ingredients to the creamed mixture.
- Using a large spoon, drop globs of the batter onto a large baking sheet covered in parchment paper. How big you make the globs depends on how large you want your cakies (er, whoopie pies).
- Bake for about 10 minutes or until toothpick inserted in center of pies comes out dry. Let cool.
- Directions for filling:
- Cream the powdered sugar and butter together.
- Add orange juice and peel and beat until smooth.
