Instructions
- Use miniature cupcake papers found at party decorations counters. Mix all ingredients except wafers. Put 1/4 tsp wafer crumbs into paper cups & put cake ingredients on top (about 1 teaspoon). Bake at 350 for 15 minutes. You can place cupcake papers directly on a cookie sheet. Cool & top with a drop of pie filling, either strawberry, blueberry or cherry.
Cheesecake works really well with Lambrusco, Alcoholic Drink, and White Wine. White dessert wines are a safe pick for cheesecake (without chocolate), but a sweet lambrusco will be so good with classic strawberry cheesecake. The Medici Ermete Concerto Lambrusco Reggiano with a 5 out of 5 star rating seems like a good match. It costs about 23 dollars per bottle.
