Instructions

  1. Season both sides of fish with seasoned salt.
  2. Heat oil in pan over medium heat. When ready (oil is hot but no smoking hot), fry fish with both sides lightly browned. Set aside.
  3. Using the same pan, saut garlic until lightly browned using the oil previously used to fry the fish.
  4. Add in onions and tomatoes. Sautee until onions are translucent.
  5. Add in fish and coconut milk. Let cook until coconut milk boils. Season with seasoned salt only if you so desire.
  6. Serve over warm over steamed rice.

Fish can be paired with Pinot Noir, Pinot Grigio, and Gruener Veltliner. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. The Beaux Freres Willamette Valley Pinot Noir with a 4.7 out of 5 star rating seems like a good match. It costs about 50 dollars per bottle.
